Almond Cookies

Interesting. I liked the almond flour cookie. I prefered it cooked to the point where the edges were turning golden and the bottom was a little bit dark, not just golden brown - which added a nice carmellized touch - otherwise the cookies seemed a bit underdone.

    Combine:
  1. 9 oz (2.25 c) almond flour/meal
  2. 1.5 c sugar
  3. 1/8 t salt
  4. 2 t grated lemon peel
  5. 2.5 c flour
    Add and beat until well blended:
  1. 2 eggs, slightly beaten
  2. 4 T soft butter
    Knead in to make an easy-to-handle dough:
  1. 2-3 T heavy or light cream
    Cooking:
  1. Oven to 350 F
  2. Dough into 4 parts, each part to make 8 cookies.
  3. Roll into cylinders 3/4" in diameter
  4. Cut cylinders into 1.5" long pieces. Don't make it longer - this is a rich cookie and there is no leavening!
  5. Place on prepared sheets. They don't spread much, so 1" apart is OK.
  6. Bake 20-25 minutes, until turning golden.
