Make Breakfast using Quick Mix as a base.
Pancakes OR Waffle Recipe
The difference between pancakes and waffles is the amount of liquid you add.
Basic Pancake / Waffle Recipe
- Start heating your skillet or waffle iron: it must be hot enough for drops of water to dance on it before you try to cook.
- Beat together in a quart-size Pyrex measuring cup:
- 1 egg
- enough milk to make a total of one-cup liquid.
- Add to the liquid ingredients and mix gently:
- Mix gently.
- This amount of liquid will normally produce a good waffle or a thick pancake. For thin pancakes, add another 1/8 c liquid.
- Check skillet heat by shaking a few drops of water on it. The pan
must be hot enough to make drops of water dance on it.
- If hot enough, then grease with Pam or Crisco or other shortening.
- Pour on batter and cook.
- Flip pancakes when bubbles appear on top surface.
- Turn waffles when steam stops.
Chocolate waffles are a nice change of pace.
- Beat together in a one-quart Pyrex measuring cup:
- 1 egg
- Top off with milk. Beat.
- In a one-cup measure, place:
- 1/8 c (2 T) cocoa powder
- 1/8 c sugar
- pinch of cinnamon and/or cardamon
- Top off with Quick Mix
- the egg/milk combination prepared above.
- more milk, if necessary.
- Add the dry ingredients to the wet ones and mix gently.
- Cook as per pancake instructions, above.
