Pesto and Pasta Salad
Pesto and Pasta Salad
This is a beautiful dish. Prepare it with the freshest vegetables you can find.
- Prepare the Vegetables:
- 2-3 cups cherry tomatoes, whole
- 1 c minature carrots, sliced thickly
- 3 stalks celery, sliced thickly
- 1 red and 1 yellow bell pepper, chopped
- 4 oz can sliced black olives
- 3/4 c crumbled feta
- 4 oz havarti cheese, chopped into small cubes and mixed with a bit of olive oil
- [optional] cucumber, chopped
- [optional] 3/4 c pepperoni sausage, cubed
- Prepare the Pasta:
- 1 lb spiral macaroni, cooked al dente and mixed with a bit of olive oil
- Several heaping tablespoons good grade pesto, stirred in gently
This salad has no dressing. The feta flavors the vegies, the pesto flavors the pasta. The pepperoni is completely optional; it is a delicious dish without any meat in it at all.
Serve pasta and vegies in separate dishes OR in one large dish with vegies in the middle and the pasta in a ring around them.
