Swedish Rusks
Grandma's Swedish Rusks
325 degrees...30 minutes, soft: 90 minutes, hard
- Cream 1 cup butter and scant 2 cups sugar together.
- Add 2 eggs and 2 t almond extract, and beat well.
- Add 1 c sour cream and 1 c chopped nuts and beat well.
- Sift together: 5 c flour, 1 t soda, 1 t salt, 1 t cardamon.
- Stir flour mixture into butter mixture.
- Divide dough into six parts. Shape each part into 15" rolls.
- Place side-by-side on UNGREASED cookie sheets.
- Bake at 325 degrees for 30 minutes.
- Cut into 1" slices.
- If desired, double-bake the slices for one hour at 250 degrees.
