Snicker Doodles

400 degrees ..8 minutes...

Cream together 1 c butter (or margarine) and 1.5 c sugar.
Add 1 jumbo egg and beat well.
Sift together scant 3 c flour (half whole wheat is OK), 1 t soda and 1/4 t salt.
Add flour mixture to butter mixture and beat well.
Shape dough into walnut-sized pieces and roll in cinnamon sugar.
Place 2" apart on ungreased baking sheets.
Bake at 400 degrees for 8-10 minutes. Cookies will puff up and then flatten as they bake.
